Artichoke Bites


I have written about these artichoke squares before. They are a great side dish or party appetiser. My newest version of these delectable hand-held snacks, pictured here, taste a lot like pizza bites. I adapted my previous recipe by adding tomatoes, using sriracha to add some heat, and changing the ratio of artichokes and cheese.


Artichoke Bites
makes 24 appetizer squares
adapted from Tis the Season: Vegetarian Christmas Cookbook 
1 can (14 oz, 390 g) artichoke hearts
2 cloves garlic, minced
5 cherry tomatoes, halved
2 eggs
1 slice whole wheat bread, roughly chopped or crumbled
1/2 t dried oregano
1 T sriracha
1 c (100 g) grated cheddar cheese
Preheat the oven to 350 F (180 C).
Drain the can of artichoke hearts, reserving 3 T of marinade. Roughly chop the artichokes.
Heat a small pan and add the reserved marinade. Add the garlic and cherry tomatoes and fry until golden.
In a large bowl, combine all the ingredients.
Grease a 6" x 9" (15 x 23 cm) pan.
Pour in the mixture. Bake for 30 minutes, until lightly browned.
Cut into 24 squares.
